Electrolux

Electrolux is a kitchen equipment provider who specialized in industrial kitchens. From ovens to blast chillers, they have many different types of equipment for everyone’s kitchen needs. 

Today, we had a Chef from Electrolux come and show us all of the different things that the ovens can do. We learned how to cook veggies and keep them green and even how to sous vide without water! This is something I did not even know was possible but with their air-o-steam oven, just a high amount of steam allows one to sous vide. This would be good for doing large banquets or a busy night because you could do a lot at one time. When it comes to doing smaller amounts, I probably would not use a whole oven for this. 

These ovens also have a proofing setting. This is great because a proof box is both expensive and takes up more valuable space. Now with one oven, it allows you to do two things at once. When on the proofing setting there is no light because light can cause extra heat, affecting the bread. I think this is also a good setting to make sure people have the oven set properly. If someone messes up and just turns the steam on, with one look, you can tell if it is right based on the light being on. 
 In Italy, religion is very important. When the dough is resting, they cut a cross on the top of it for two reasons:
1. It allows the dough to further expand
2. It is in the shape of a cross; Jesus will watch over the bread

Baked bread! I would have baked it for maybe 5 or so minutes less time because I think it has a very thick crust, but I really liked this recipe and would use it again. 

We also cooked our porchetta that we had made the day before on salumi day. We were curious how the Electrolux chef would suggest that it be cooked. There is a setting on the oven that is in the automoatic options and it says "low temperature." This setting allows you to set the temperature at which you would like the food cooked to and the oven will adjust the temperature throught the cooking process. It begins at a higher temperature, lowering until it gets to the temperature you set. This is really good when you just need to get the food in and more or less forget about it. The oven shows you the time left for the cooking process and also the internal temperature of, in this case, the meat.


I really enjoyed this experience because I believe it can be very helpful for the future. Ovens are very expensive and it is important to use them properly and efficiently. Moving forward, I feel this will make things easier it the kitchen and it shows that an oven is definitely an investment, but when you use them to their full potential, your return will happen a lot more quickly.
